Day 38: Avocado Egg Toast for Brinner

You ever had one of those days where you just didn’t feel like adulting? You know the ones, where the thought of putting any more effort into life than watching TV on the couch seems exhausting. That’s definitely how today was for me. Unfortunately, I am what society would consider an adult, so on this rainy day I struggled through work, errands, and even the gym, before it came time to consider what to make for dinner.

Usually, I’d be excited for dinner time. But today all I reeeeeaaalllyyyy wanted to do was order a pizza and call it a night. But since I’m trying to eat healthy and save money, avocado and eggs it was. Plus, that means I got to call it brinner, which sounds like way more fun than dinner and ended my day on a good note 🙂Avocado Egg Toast | Diamonds & Bacon

This isn’t really a recipe, if I’m being honest with you. This I guess is more of technique? Either way, it’s easy and takes all of 5 minutes to put together. If you can scramble eggs, smash avocados, and make toast (surprisingly, always the hardest part for me), then you’re good to go!  Avocado Egg Toast
Serves: 1     Total Time: 5 min


  • 1 slice whole wheat bread
  • 2 eggs
  • 1/2 avocado
  • 1/2 tsp ground mustard
  • 1/2 tsp salt
  • 1/2 tsp lemon pepper
  • 1/4 tsp red pepper (optional) 


  1. Put bread in toaster, toast on preferred setting
  2. While bread is toasting, scramble eggs in a small bowl with salt and ground mustard
  3. In a small skillet on medium-high heat, cook eggs, moving constantly to scramble them 
  4. When toast is done, smash 1/2 an avocado on top using a fork and spread  evenly
  5. Sprinkle lemon pepper and red pepper (if using) on avocado, top with scrambled eggs 
  6. Enjoy for breakfast, brunch, lunch, dinner, or brinner
